Almond Noodle Kugel
Recipe Ingredients
1/2 lb. broad noodles
2 quarts boiling water
1 tsp. salt
2 eggs
3 Tbsp. sugar
1/4 tsp. cinnamon
1/8 tsp. salt
4 Tbsp. shortening
1/2 cup chopped seedless raisins
1/4 cup chopped almonds (optional)
Instructions
Drop noodles in rapidly boiling salted water and cook until tender. Drain; pour hot water over noodles to rinse well. Beat eggs with sugar, cinnamon, salt and add the noodles. Melt shortening in baking dish and add to mixture. Add raisins and nuts to mixture; stir thoroughly, then turn mixture into greased baking dish. Bake 45 minutes at 400° or until noodles are golden brown.
