Almond Torte

9 eggs
1 ˝ cups sugar
12 oz. Shelled almonds
˝ teaspoon vanilla & ˝ teaspoon almond extract
or
1 teaspoon lemon juice & rind of 1 lemon
Instructions
Grease 10 inch spring form and place waxed paper on bottom. Grind almonds with skin (should be consistency of coarse flour, use special almond grinder). Separate eggs. Mix egg yolks, sugar and flavoring. Add ground almonds. Fold in stiffly beaten egg white. Bake one hour at 350°. Top with confectioners’ sugar when cool.
