Apple Cream Coffee Cake (low cholesterol)

Recipe Ingredients
¼ cup raisins (optional)
2 teaspoons cinnamon
½ cup corn oil margarine
½ cup frozen egg substitute
1 teaspoon vanilla extract
1 ½ cups sugar
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup diet sour cream dressing
1 medium apple
Instructions
1) Mix raisins, cinnamon, and ½ cup sugar
2) Heat oven to 350°
3) In large bowl with mixer at high speed, beat margarine until creamy
4) Gradually add egg substitute mix well, add vanilla and mix well (medium speed).
5) Sift dry ingredients together. Add flour mixture and diet sour cream dressing alternately. Mix well after each addition.
6) Spread batter (half) in a well greased 9 inch tube pan. Top with thinly sliced apple. Sprinkle with raisin mixture. Top with remaining batter. Sprinkle cinnamon and sugar.
7) bake 40 to 45 minutes or till toothpick comes out dry
8) Let cake cool awhile before taking out of pan.
