Apple Molasses Cake

Recipe Description

Recipe Ingredients

2 cups flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon 
½ teaspoon nutmeg
1 cup sugar
½ cup butter or margarine, softened
3 eggs
1 cup unsweetened applesauce
¼ cup molasses
1 cup raisins
½ cup chopped nuts
confectioners’ sugar

Instructions

Sift together flour, baking powder, salt & spices; set aside. Cream sugar & butter; add eggs, one at a time, beating well after each. Add flour mixture alternately with applesauce & molasses; beat until smooth. Fold in raisins & nuts. Turn into greased 9 X 5 X 3 loaf pan and bake at 350° for 1 hour. Turn onto cake rack to cool. Sprinkle with confectioners’ sugar before slicing.
