Apricot Pecan Squares

Recipe Description

Recipe Ingredients

¾ cup soft margarine
2 eggs plus 2 egg whites
3 cups plus 1 tablespoon flour
2 cups sugar (save 1 cup for meringue)
1 teaspoon vanilla
1 jar (12 ounce) apricot preserves

Instructions

Cream margarine and 1 cup sugar. Add 2 eggs, beat until light. Add vanilla and 3 cups flour. Mix well. Pat into greased 10 X 15 pan. Cover with waxed paper and roll. (Remove waxed paper). Spread 1 jar apricot preserves on top. Bake at 375° for 6 minutes. Beat 2 egg whites and pinch of slat. Add 1 cups sugar slowly. Add 1 tablespoon flour. Add 1 cup pecan halves, folding in. spread meringue on top. Bake 15 minutes longer until lightly browned. Cut into squares when cool.
