Baked Fish with Cheese and Wine

Recipe Description

Recipe Ingredients

2 lbs fillet of sole
2 shallots
¼ cup chopped parsley
1 tablespoon chopped chives
½ lb. mushrooms
4 tablespoons butter
½ cup dry white wine
½ cup cornflake crumbs
½ cup grated parmesan cheese

Instructions

Chop shallots, parsley, and chives. Slice mushrooms. Sauté together in butter, add cornflake crumbs. Arrange fish in buttered baking dish. Cover with half of vegetable mixture. Fold fish over. Cover with remainder of mixture sprinkle with the wine and cheese. Dot with butter. Bake at 350° for ½ hour
