Baked Fish with Vegetables

Recipe Description

Recipe Ingredients

4 or 5 peeled potatoes
2 seeded green peppers
1 large onion
salt, pepper, paprika
2 tablespoons butter
1 lb. fish fillets
1 tablespoon lemon juice
½ cup mayonnaise
1 tablespoon prepared mustard
2 teaspoons flour

Instructions

Quarter and cut into ½ inch slices the potatoes, green pepper and onion. In a 12 X 8 X 2 inch pan combine vegetables; season with salt and pepper and dot with butter. Bake at 400° for 30 minutes, stirring once or twice. Meanwhile, sprinkle fish fillets with lemon juice. Combine mayonnaise, mustard and flour; spread half on one side of fillets. Roll fillets evenly, tuck into vegetable mixture; and spoon remaining mayonnaise mixture over each fillet. Sprinkle with paprika and bake 15 to 20 minutes longer, or until fish flakes with fork, 4 servings.
