Baked Haddock in Cheese Sauce

Recipe Description

Recipe Ingredients

Steam 1 lbs. fillet of haddock, wrapped in cheesecloth, in boiling, 
salted water to which has been added 1 large onion and several stalks of 
celery for about 10 minutes. Lift out fish, cool and flake. Cooke together 
until it thickens; ¾ cup liquid from cooked fish, 1 ½ tablespoons flour, 
1 ½ tablespoons butter, slat and pepper to taste. Add ½ lb. mild American 
cheese, 1 (4 oz) can mushrooms, drained, and 2 or 3 pimentoes, diced. 
Add flaked fish and mix well. Pour into greased baking pan, sprinkle with 
½ cup bread crumbs and ½ cup slivered almonds, dot with butter. Bake 
at 350° for about 45 minutes.
