Baked Mackerel

Recipe Description

Recipe Ingredients

1 large sweet potato
1 large white potato
1 medium onion
salt and pepper
paprika
1 ½ lbs. mackerel
½ lb. green beans
2 large carrots

Instructions

Pare and slice the 2 kinds of potatoes, carrots and onion. Cut the green beans in 1 inch slices and wash. Arrange all the vegetables in large flame-proof casserole. Season with salt, pepper and paprika. Add 1 inch water and boil the vegetables for 10 minutes. Arrange the fish (whole or fillets or sliced) on top of the vegetables, season the fish with the salt and pepper and paprika. Dot all over with butter. Bake at 400° for about 40 minutes, until the exposed vegetables are crisp.
