Banana Blonds
Recipe Description
Recipe Ingredients
½ cup shortening
1 cup light brown sugar
1 egg
1 teaspoon vanilla
1 ¼ cup flour
1 teaspoon baking powder
¼ teaspoon salt
1 cup mashed banana
2/3 cup flaked coconut
Topping: 1/3 cup coconut plus 1 tablespoon sugar plus 1 tablespoon melted butter.
Cream together shortening, brown sugar, egg and vanilla. Sit together flour,
baking powder and salt; and add. Fold in banana and coconut. Turn into greased
13X 9 X 2 pan. Mix topping; spoon evenly over batter. Bake at 325° 35 to 40
minutes. Cut in bars when cool.
