Basic Butter Icing

Recipe Ingredients
6 tablespoons butter, softened
3 cups sifted confectioners’ sugar
3 tablespoons light cream
1/8 teaspoon salt
1 ˝ teaspoons vanilla
Instructions
Combine all ingredients and beat at slow speed until blended. Then increase speed; beat at high speed about 3 minutes, or until the icing is thick enough to spread. Add more liquid, if needed. Frosts top and side of two layers or 13 X 9 inch cake
1. Instead of light cream, substitute sherry; good on chocolate cake
2. For Orange or Lemon Icing: substitute orange or lemon juice for light cream; add 1 teaspoon grated rind. Omit vanilla.
3. For Chocolate Icing; add one or two squares melted chocolate, depending on the degree of chocolate desired.
4. For Mocha Icing; substitute strong cold, black coffee for the cream in the chocolate icing, using only 1 square of chocolate.
5. For Continental Chocolate; use orange juice as the liquid in chocolate icing.
