Bean & Barley Soup

Recipe Description

Recipe Ingredients

2 ½ - 3 quarts water
salt to taste
½ cup barley
¼ cup lima beans
¼ cup pea beans
1 pound meat and bones
1 stalk celery
2 carrots
soup greens if desired

Instructions

Bring salted water to boil. Add barley and beans. After about an hour, add meat, celery, and carrots. Simmer. When celery and carrots are cooked, remove from soup and mash through strainer. Add this to soup and stir in. continue to simmer until meat is done and beans are soft. About three hours
