Beet Horseradish Relish

Recipe Description

Recipe Ingredients

3 small cans (8-oz.) whole small beets
1 cup broken walnuts
½ cup red beet horseradish
2 teaspoons salt
1/8 teaspoon pepper
½ cup cider vinegar
1 tablespoon sugar

Instructions

Drain beets, reserving liquid. Place beets in medium bowl and add walnuts, horseradish, sugar, salt, pepper and vinegar. Add enough beet liquid to just cover mixture. Mix well, cover and refrigerate overnight before serving. Makes about 4 cups.
