Braised Parsnips

2 pounds parsnips
¼ cup margarine
¾ teaspoon salt
2 teaspoons sugar
6 large lettuce leaves
3 tablespoons finely minced fresh parsley
Instructions
Wash parsnips, pare, cut into julienne strips. Heat margarine, add parsnips, salt, sugar. Wash lettuce, leaving them wet. Cover parsnips with lettuce; simmer, covered, over low heat about 30 minutes or until parsnips are tender. Check for moisture; if necessary, add a little hot water, 1 tablespoon at a time. Discard lettuce, fold in parsley and serve hot. Serves 4 to 6.
