Broccoli or Spinach Pseudo-Soufflé

Recipe Description

Recipe Ingredients

2 (10 ounce) packages of frozen chopped broccoli (or spinach), thawed
¼ cup minced onion
6 tablespoons butter (or margarine)
2 tablespoons flour
½ cup water
1 (8 ounce) jar Cheez-Whiz
3 eggs, well beaten
½ cup crushed cracker crumbs

Instructions

Thaw and drain broccoli; do not cook set aside. Sauté onion in 4 tablespoons of the butter until soft. Stir in the flour; add water. Cook over low heat, stirring, until mixture thickens and comes to a boil. Stir in cheese; stir in well drained broccoli. Ad eggs; mix gently until blended. Turn into greased casserole (1 ½ quart); cover with crumbs and dot with remaining 2 tablespoons butter. Bake at 325° for 40 to 45 minutes. This can be prepared ahead and refrigerated until baking time; bake about 15 minutes longer. Can be frozen after baking. Serves 8.
