Carrot Cake with Walnuts

Recipe Ingredients

(6 carrots) 2 cups grated
1 cup sugar
1 teaspoon baking powder
1 cup white raisins (put in small dish with a little hot water to soften)
4 eggs
1 cup walnuts, cut into small pieces
1 teaspoon baking soda
¾ cup oil
2 cups flour

Instructions

Peel carrots and grate them on the large size grater. Place in a large mixing bowl. In another large bowl, beat up the eggs very thoroughly, add sugar and mix well, sift the flour with baking soda and baking powder, add raisins, walnuts, carrots and oil a small amount at a time. Grease large baking dish, 13 X 9 inches, with Crisco. Heat baking dish in oven before placing the mixture in pan, and bake for 40 minutes, or until toothpick comes out clean, at 350°. Cake should be dry when done.
