Chicken A L’Orange

Recipe Description

Recipe Ingredients

1 cup orange juice
2 tablespoons grated orange rind
¼ teaspoon tabasco
½ teaspoon dry mustard
1 can mandarin oranges, drained
3 frying chickens, cut up
4 tablespoons margarine
2 tablespoons flour
1/8 teaspoon pepper
¼ teaspoon salt
¼ cup currant jelly

Instructions

Mix orange juice, grated rind, tabasco, mustard and enough water to make 1 ½ cups liquid. Reserve. Sprinkle chicken pieces lightly with salt and paprika. Brown in shortening and remove. Add four, pepper and salt to drippings; stir to make a smooth paste. Add reserved liquid and cook, stirring constantly, until mixture thickens and comes to a boil. Stir in current jelly. Put chicken pieces into baking dish. Pour over gravy and bake at 350° about 45 minutes or until tender. Add drained mandarin oranges last 5 minutes of cooking time.
