Chicken A La Kiev

Recipe Ingredients
8 boned chicken breasts (single breasts)
¼ lb. pareve margarine
2 tablespoons chopped chives
2 tablespoons parsley, chopped
1 clove garlic, crushed
1 ½ teaspoon salt
½ teaspoon pepper
½ teaspoon rosemary
flour
2 or 3 eggs
bread or cracker crumbs
Instructions
Flatten breasts with rolling pin. Cream margarine with chives, parsley, garlic, salt, pepper and rosemary until smooth. Chill mixture until firm. Sprinkle breasts with salt and pepper. Place a tablespoon of mixture on each fillet. Tuck in ends and roll lightly. Secure with wooden picks. Roll fillets in flour, then in beaten egg, and finally in crumbs. Chicken may be fried in oil in frying pan at 360°until done or it may be browned quickly and then baked in 350° oven until finished. Can be frozen after a quick browning and then baked while still frozen (about 40 minutes) in a pre-heated 350° oven.
