Chicken A La King

Recipe Description

Recipe Ingredients

3 tablespoons chicken fat (or pareve margarine)
3 tablespoons flour
1 ½ cups chicken soup (or bouillon made with 2 cubes)
1 egg yolk
2 cups cooked chicken, in chunks
¼ cup chopped pimiento
½ pound sautéed mushrooms (or 1 can)
½ cup slivered blanched almonds
½ teaspoon salt
1/8 teaspoon pepper

Instructions

Melt chicken fat; stir in flour. Add soup or bouillon and cook, stirring, until sauce thickens and boils. Add a small amount of hot sauce to beaten egg yolk, return to sauce and cook and stir over low heat. When egg yolk thickens sauce, add chicken, pimiento, mushrooms, almonds and seasonings. Serve over toast or in pastry shells. Makes 4 servings.
