Chicken Cacciatore

Recipe Ingredients
3 tablespoons olive oil
1 cup finely chopped onions
½ pound sliced fresh mushrooms
1 (no. 2 ½) size can whole tomatoes
1 6 ounce can tomato paste
5 pounds chicken breasts or pieces
¼ teaspoon minced garlic
¼ teaspoon black pepper
2 ½ teaspoon salt
½ teaspoon oregano
½ cup dry red wine
Instructions
Heat olive oil in skillet. Add onions and mushrooms and sauté. Then add all remaining ingredients, except chicken and wine, in order and simmer for 20 minutes. Add wine. Shake chicken in flour in plastic bag until coated. Brown chicken in olive oil in another skillet. Add to sauce and simmer for one hour or until tender. If using chicken breasts, they should be cut into pieces, not used whole
