Chicken Cerise

Recipe Description

Recipe Ingredients

2 to 3 pound broilers cut into serving pieces
melted margarine,
salt & pepper
1 ¼ cups tomato juice
1 cup orange juice
½ cup ketchup
1 (1 pound) can black bing cherries, pitted
1 large navel orange, sliced, with rind left on

Instructions

Season chicken pieces, brush all over with melted margarine. Broil on both sides until browned but not cooked. Place in shallow pan so that pieces do not overlap. Mix tomato juice, orange juie, ketchup, liquid from drained cherries, bring to a boil and simmer for one hour. Cool slightly. Slice orange thin, place slices on chicken. Pour marinade over chicken. Let stand in refrigerator several hours or overnight. Bake in 350° oven about 1 ¼ hours, turning frequently and basting. Add cherries last 15 minutes. Bake covered the first half hour, then uncover.
