Chicken Marengo

Recipe Description

Recipe Ingredients

1 (3 pound) broiler (skinned), cut up 
salt to taste
½ teaspoon paprika
2 tablespoons olive oil or chicken fat
½ pound whole small mushrooms
1 medium onion (sliced)
1 large green pepper (cut in strips)
1 garlic clove or equivalent garlic salt
1 can (1 pound) tomatoes
¼ cup water

Instructions

Place chicken pieces in casserole and sprinkle with salt and paprika. Brown in oil or fat the onion, pepper and garlic until light brown. Remove garlic, if used. Add water to pan and scrape all brown particles from bottom of pan. Place mushrooms over chicken and spoon vegetable mixture over top; then spoon tomatoes over this. Cover casserole and bake in a 350° oven for 1 hour. Preheat oven. 1. Can be frozen in casserole and heated in same dish 2. very good with rice or mashed potatoes 3. Skin can be left on chicken pieces, if desired, but should be browned in frying pan before put into casserole. Skinless is a “quickie” method.
