Chinese Almond Cookies

Recipe Description

Recipe Ingredients

2 ½ cups flour
1 teaspoon baking powder 
¾ cup sugar
¾ cup soft shortening
1 whole egg
2 tablespoons water
1 teaspoon almond extract
1 egg yolk
1 tablespoon water

Instructions

Sift together flour, baking powder and sugar; set aside. Mix egg and shortening until creamy; add 2 tablespoons water and almond extract. Add flour mixture, stir with fork until mixture draws away from sides of bowl. Knead to blend. Refrigerate for 1 hour. Form into 1 inch balls and place on ungreased cookie sheet. Flatten balls with palm of hand; brush with egg yolk mixed with 1 tablespoon water; place almond or slivered almond pieces in center. Bake at 350° for 25 minutes. Makes 3 dozen. Freezes well.
