Chinese Duck

Recipe Description

Recipe Ingredients

Prick skin of duck. Mix 3 tablespoons soy sauce and 1 teaspoon ground ginger 
brush this mixture inside and outside of duck and let stand 30 minutes. Roast 
duck in 325° oven for 1 hour
Mix together:
½ cup soy sauce
1 teaspoon ginger
½ cup honey
½ cup sherry
1 clove garlic

Instructions

Simmer for 10 minutes and remove garlic. Prick duck again and brush with above mixture and repeat every 15 minutes for 1 hour. Heat together: ½ cup currant jelly, ½ cup orange juice and ¼ cup red wine. Add 1 teaspoon cornstarch dissolved in 1 teaspoon cold water. Cook until thick. Pour over duck.
