Chinese Style Fish

Recipe Ingredients
Cut 2 to 2 ½ pounds fish fillets into 2 inch squares. Marinate in ¼ cup soy
sauce for 30 minutes, turn twice.
Batter: combine ½ cup
flour, ½ cup cornstarch, 1 cup milk, 1 egg, 3 teaspoons baking
powder, dash pepper.
Instructions
Heat oil in skillet to 375°. Remove fish from soy sauce, dip in
batter, let excess batter drain off. Drop into hot oil, fry until
crisp, less than 2 minutes. Place on paper-lined pan and keep hot in 200° oven.
Sauce: heat 2 (1 pound 4 ounce) cans pineapple chunks (with liquid)
with ¾ cup sugar. Dissolve 1 tablespoon cornstarch in ¼ cup cold water,
and add to pineapple and cook until thick. Serve sauce with fish
