Chocolate Cherry Pound Cake

Recipe Description

Recipe Ingredients

2 ½ cups sifted cake flour
1 teaspoon baking soda
1 teaspoon salt
1 jar (16 oz) red cherries
1 cup buttermilk
1 cup butter
1 ½ cups sugar
5 large eggs
5 squares baking chocolate, melted
½ cups chopped nuts
2 teaspoons vanilla

Instructions

Grease a 10 inch tube pan or bundt pan. Sift together cake flour, soda and salt in a small bowl. Drain cherries reserving 1/3 cup juice. Cut cherries finely. Stir together the 1/3 cup juice and the buttermilk. In a large bowl, cream butter and sugar. Thoroughly beat in eggs, one at a time. Blend in chocolate. Alternately add flour mixture and buttermilk mixture a small amount at a time, beating after each addition until smooth. Add cherries and beat a minute longer. Stir in nuts and vanilla. Pour into prepared pan. Bake at 350° for one hour in bundt pan or one hour and five minutes for tube pan.
