Chopped Eggplant

Recipe Description

Recipe Ingredients

1 eggplant
1 small green pepper
1 small onion
1 tablespoon vegetable oil (more if desired)
1 tablespoon vinegar or lemon juice
1 small red tomato
salt and pepper to taste

Instructions

Bake eggplant in moderate oven until soft. Lift carefully onto dish. Remove skin. Chop onion and green pepper fine. Add eggplant and tomato. When well chopped, add seasoning, oil and vinegar. Serve on lettuce leaf.
