Cinnamon Nut Diamonds

Recipe Description

Recipe Ingredients

1 cup softened butter or margarine
1 cup light brown sugar
1 teaspoon vanilla
1 egg yolk
2 cups flour
1 teaspoon cinnamon
½ teaspoon salt
½ cup chopped nuts
1 egg, slightly beaten
½ cup chopped nuts

Instructions

Sift together flour, cinnamon and salt. With electric mixer, cream butter, brown sugar, vanilla and egg yolk until light and fluffy. Add flour mixture and ½ cup nuts. Spread in greased 15 X 10 X 1 inch jelly roll pan. Brush with beaten egg and sprinkle with ½ cup nuts, pushing them into the dough. Bake at 350° for 25 to 30 minutes. Cut into diamond shaped pieces while warm; remove to wire rack to cool.
