Coffee Cloud Pie

Recipe Description

Recipe Ingredients

2 to 3 tablespoons freeze dried coffee
1 tablespoon boiling water
1 (3 ¾ oz) package vanilla instant pudding
1 cup milk
1 cup sour cream
1 9 inch prepared graham cracker crust
Topping: 1 cup heavy cream, 2 teaspoons instant coffee, 2 tablespoons confectioners sugar.

Instructions

In measuring bowl, dissolve 2 to 3 tablespoons freeze-dried coffee in boiling water; set aside. In large bowl, combine instant pudding, milk, sour cream and coffee mixture. Beat well. Pour into graham cracker crust. Chill about 1 hour, until firm. In small bowl, combine heavy cream, confectioners’ sugar and instant coffee; beat until soft peaks form. Spread over pie. Refrigerate until ready to serve.
