Cold Tomato Soup

Recipe Description

Recipe Ingredients

1 28 ounce can of whole peeled tomatoes and juice
1 large cucumber, peeled, seeds removed
1 small onion chopped
1 teaspoon salt
¼ teaspoon pepper
4 tablespoons mayonnaise
1 tablespoon minced fresh parsley
1 teaspoon curry

Instructions

Put tomatoes, onion, cucumber, salt and pepper in blender. Mix until smooth. Add mayonnaise, parsley, curry, blend at lowest speed for 1 second. Chill. Serve in chilled bowls. Garnish with cucumber slices, sliced avocado or sliced egg.
