Corned Beef in Foil

Recipe Description

Recipe Ingredients

3 to 4 lbs. corned beef
¼ cup water
2 tablespoons pickling spice
1 orange, sliced
1 onion, sliced
1 celery stalk with leaves
1 carrot, sliced

Instructions

Soak corned beef in water to cover for half hour or longer if deeply corned. Place a large sheet of heavy duty foil in a shallow pan. Remove corned beef from water and pat dry to remove any salt on surface. Place in center of foil and pour ¼ cup fresh water over it. Sprinkle with pickling spice and arrange oranges slices and vegetables over and around the meat. Bring long ends of foil up over meat and seal tightly with double fold. Seal other ends, turning them up so liquids cannot run out. Bake in 300°oven for 4 hours. Makes 8 to 12 servings.
