Country French Chicken

Recipe Description

Recipe Ingredients

1 broiler/fryer chicken
dash of salt and pepper
¼ cup margarine
2 tablespoons flour
¼ teaspoon each thyme and rosemary
1 teaspoon sugar
2 tablespoons lemon juice
1 cup chicken broth (or bouillon cube)
½ cup dry white wine
12 small onions, peeled
½ pound fresh mushrooms

Instructions

Sprinkle chicken with salt and pepper. Brown in margarine in dutch oven or heavy skillet, then remove. Blend flour, herbs, sugar and ½ teaspoon salt into dripping in pan and stir to a smooth paste. Add lemon juice and broth. Cook, stirring constantly, until the mixture comes to a boil. Add chicken, wine and onions. Cover and simmer 20 minutes. Add mushrooms. Cook another 10 minutes until chicken and vegetables are tender.
