Cream of Broccoli Soup

Recipe Description

Recipe Ingredients

1 bunch young broccoli
1 ˝ cups salted boiling water
1/3 cup onions, diced
3 tablespoons margarine
2 cups chicken broth or pareve mix
1 cup coffee lightener (pareve)
salt and pepper

Instructions

Soak broccoli in cold salted water for ˝ hour. Drain and rinse. Trim stems, slice very thin and put in soup pot with separated flowerettes on top. Add boiling water, cover and steam until tender. Reserve ˝ cup flowerettes for garnish. Puree the rest with its cooking water. Sauté onions in butter until yellow and add to puree with the chicken broth. Bring to a boil and add reserved flowerettes and bring to a boil again. Stir in coffee lightener, but do not boil again. Soup should be the consistency of cream. Serves 6 to 8.
