Daiquiri Pie

Recipe Description

Recipe Ingredients

9 or 10 inch prepared crumb crust
1 envelope unflavored gelatin
2/3 cup sugar
½ teaspoon salt
½ cup water
3 egg yolks
1/3 cup lime juice
3 to 4 drops green color
2 tablespoons light rum
3egg whites
1/3 cup sugar

Instructions

In saucepan, combine gelatin, sugar and salt. Stir in egg yolks, water and lime juice. Cook over low heat, stirring until thickened and gelatin is dissolved. Remove from heat; add food coloring. Cool to room temperature; stir in rum. Chill until mixture begins to thicken. Beat egg white to soft peaks; gradually add the 1/3 cup sugar, beating to stiff peaks. Fold in gelatin mixture; chill until it mounds. Turn into crust; chill until firm. Top with whipped cream and, if desired, lime twists. Serves 8.
