Date Nut Breads

Recipe Description

Recipe Ingredients

½ lb. pitted dates, snipped fine
2 teaspoons baking soda
1 7/8 cups boiling water
2 cups sugar
½ cup butter
2 eggs, beaten slightly
1 tablespoon instant coffee
1 tablespoon brandy
2 cups whole wheat flour
2 cups unbleached white flour
1 teaspoon salt
1 cup nutmeats, coarsely chopped

Instructions

Combine dates and soda; pour boiling water over and set aside to cool. In another bowl cream together sugar, butter and eggs. Add the date mixture. Blend in flours and salt; add instant coffee and brandy, then nuts. Mix until shiny-smooth. Turn into two greased 9 X 5 inch loaf pans. Bake at 325° for 1 hours. Makes two loaves; freezes well.
