Egg Mold

Recipe Description

Recipe Ingredients

1 dozen hard cooked eggs, chopped fine
1 sweet onion, chopped fine
1 small green pepper, chopped fine
1 small jar green olives with pimento, drained, chopped fine
1 package unflavored gelatin
1 small can pimiento, drained, chopped fine
1 teaspoon sweet relish or onion relish
1 cup mayonnaise
lemon pepper to taste

Instructions

Prepare each item separately and set aside. Strain each ingredient so there is no excess juice. Mix all the above. Add 1 package unflavored gelatin, softened in ¼ cup cold water and then ¼ cup boiling water, until dissolved. Mix everything together and put into an oiled, 10 cup mold. Make a day or two before using. Serve on crackers or party rye. Can be unmolded and sliced, to be served as a salad.
