Eggplant with Tomatoes and Chick Peas

Recipe Description

Recipe Ingredients

Sauté large onion until golden brown. Garlic may be added. Add cubed, 
peeled eggplant and sauté 10 minutes. Add large can of tomatoes. Add 1 
can chick peas, drained simmer about 40 to 50 minutes until eggplant is 
tender. Place in baking casserole. Before serving, heat through thoroughly.
