Fast & Easy Cheese Blintzes

Recipe Description

Recipe Ingredients

½ pound cream cheese
¾ teaspoon salt
2 eggs, beaten
1/3 cup milk
6 tablespoons butter
Midget tea matzos

Instructions

Beat the cheese until smooth; add ¼ teaspoon of the salt and 2 tablespoons of the beaten egg. Mix well together. Spread the mixture on the matzos; cover with more matzos, pressing down firmly. Beat the milk, remaining salt and eggs together. Dip the “sandwiches” into the milk and egg mixture soaking them well. Melt half the butter in a skillet; fry the sandwiches in it until lightly browned on both sides, adding more butter as needed. Serve hot with jelly or sugar. Hit: during the year these can be made using 3 inch square soda crackers.
