Fish Rings

Recipe Description

Recipe Ingredients

1 ½ to 2 lbs, flounder fillets
½ teaspoon salt
1/8 teaspoon pepper
3 tablespoons butter
1 tablespoon minced onion
1 tablespoon flour
2/3 cup milk
½ cup bread crumbs
1 tablespoon minced parsley
chopped pimento

Instructions

Wipe fillets with damp cloth, cut into strips 1 inch wide. Sprinkle with salt, pepper. Butter regular muffin tins well. Line each with 1 strip fillet, overlapping where it joins; set aside. Chop onion and pimento with rest of fish very fine; add seasoning. Make cream sauce with butter, flour, milk add chopped fish, crumbs. Cook 2 minutes, add parsley. Fill centers of rings. Bake at 400° about 15 to 20 minutes. Unmold carefully on platter. Serve with hollandaise sauce.
