Frozen Lemon Pie

Recipe Description

Recipe Ingredients

1/3 cup vanilla wafer crumbs
3 eggs, separated
½ cup very fine sugar
1 cup heavy cream
1/3 cup lemon juice
1 tablespoon grated lemon rind

Instructions

Butter 9 inch pie plate and sprinkle with 1/4cup vanilla wafer crumbs. Beat egg whites until foamy. Continue beating and gradually add the sugar, a tablespoon at a time, until mixture is stiff and glossy. Beat the egg yokes until thick and lemon colored. Fold in the egg white mixture. Beat cream, lemon juice and rind together until stiff and fold into the egg mixture. Pour into the prepared pie plate. Sprinkle with remaining crumbs and freeze the pie until it is solid. Yield: 6 servings.
