Fruit Filled Sour Cream Coffee Cake

Recipe Description

Recipe Ingredients

¼ lb. butter or margarine
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup sour cream plus 2 tablespoons milk
½ cup raisins
½ cup cut-up dates
½ cup diced maraschino cherries
½ cup coarsely chopped walnuts
1/3 cup sugar
1 teaspoon cinnamon

Instructions

Cream together butter, sugar (1 cup), eggs and vanilla. Sift together the dry ingredients and add alternately with sour cream to creamed mixture. Spread half of batter in a greased 10 inch tube pan. Cover batter with fruits and nuts which have been mixed together. Mix together 1/3 cup sugar with cinnamon; sprinkle half of this over fruit. Pour remaining batter over fruit and sprinkle with rest of cinnamon-sugar mixture, and more chopped nuts. Bake at 350° for 45 minutes or until done. Alternate: fruits may be eliminated and you may substitute streusel: 1 ½ cups chopped nuts, 1 teaspoon cinnamon and ¼ cup sugar. Alternate: Instead of fruit, use 1 sliced tart apple. Spread butterscotch or chocolate bits under topping.
