Golden Onion Rolls

Recipe Ingredients
2 packages yeast
½ cup warm water
¼ cup sugar
¼ cup shortening
1 tablespoon salt
¾ cup hot scalded milk
2 eggs
5 to 5 ½ cups flour
poppy seeds or sesame seeds
Onion Filling:
2 cups chopped onions
¼ cup butter or margarine
¼ teaspoon salt
2 tablespoons cream
2 tablespoons slightly beaten egg (reserve remaining egg)
Instructions
Soften yeast in ½ cup warm water. Set aside. In large bowl combine the sugar, shortening, salt and hot scalded milk. Cool to lukewarm and blend in 2 unbeaten eggs and the softened yeast. Gradually add the flour to form a stiff dough. Knead on floured surface until smooth and satiny, about 3 to 5 minutes. Place in greased bowl, cover and let rise in warm place till doubled. Meanwhile prepare onion filling.
Sauté the chopped onions in butter until golden. Add the salt and a mixture of the cream and 2 tablespoons slightly beaten egg. Cool.
Shape dough in 2 inch balls. Place on greased cookie sheets. Flatten and press fingers into center to form a hollow. Place a tablespoon of filling in each hollow. Brush with reserved egg and sprinkle with poppy seeds or sesame seeds. Let rise until double in size (about 45 minutes). Bake at 400° 12 to 16 minutes until golden brown.
