Haddock with Spinach

Recipe Description

Recipe Ingredients

2/3 cup mayonnaise
¼ cup bread crumbs
3 tablespoons mayonnaise
¼ teaspoon salt
1/3 cup water
melted butter
1 package frozen spinach or broccoli
1 ½ teaspoons grated onion
1/8 teaspoon pepper
½ cup grated American cheese
2 haddock fillets 1 to 1 ½ lbs. each or scrod

Instructions

Combine spinach (boiled and drained), crumbs, 3 tablespoons mayonnaise and seasoning. Sprinkle fish lightly with salt and pepper. Place 1 fillet in greased shallow pan. Cover with spinach dressing. Top with remaining fillet and brush with melted butter. Bake uncovered at 400° for 25 to 30 minutes. Add water gradually to 2/3 cup mayonnaise, stirring until smooth. Add cheese and pour over fish. Bake 8 minutes more until sauce is hot or place under broiler until heated and lightly browned. Serves 4 to 6.
