Halibut Stuffed Avocados

Recipe Description

Recipe Ingredients

1 cup mayonnaise
2 cups halibut, cooked and flaked
2 hard-cooked eggs, chopped
4 medium-sized avocados
2 tablespoons lemon juice
½ cup soft bread crumbs
½ teaspoon dry mustard
salt, pepper

Instructions

Combine mayonnaise, mustard, lemon juice, salt and pepper. Carefully fold in fish and eggs. Cut avocados in half. Remove pit. Brush cut surface with lemon juice. Mound fish mixture on avocado halves. Sprinkle bread crumbs on fish. Bake at 350° for 15 to 20 minutes or until crumbs are lightly browned. Serves 8.
