Hamantaschen

Recipe Description

Recipe Ingredients

By hand mix together, 1 cup sugar, 1 scant cup oil, 3 eggs, ¼ cup orange juice 
and rind of 1 orange. Sift together and add 3 cups flour, 2 teaspoons 
baking powder, and ½ teaspoon salt. Add more flour, if needed, to make a 
soft dough. Roll out and cut into rounds; fill as desired; shape 
into hamantaschen. Bake on greased cookie sheets at 350° about 20 minutes. 
Prune Filling
Cook 1 pound prunes, remove pits. Pour boiling water over 1 cups raisins; 
let stand to plump, drain. Put prunes, raisins and 1 orange through food 
chopper; add ½ cup sugar and ½ cup nuts (optional). Fill 24. 
Apricot Filling
Cover ¼ pound dried apricots with ½ cup water; cook, covered, over low 
heat for 15 minutes. Mash, and add ½ cup sugar, 2 tablespoons water 
and ¼ cups nuts (optional) fills 12.
