Herring Salata
Recipe Description
Recipe Ingredients
In large bowl combine:
3 pickled herring, boned and cut into bite sized pieces
3 tart apples, peeled, cored and diced
In small bowl blend:
¼ cup olive oil or salad oil
juice of 1 lemon
3 hard boiled eggs, sliced
2medium boiled potatoes, diced
1 onion, finely chopped
1 teaspoon hot mustard
pinch of salt and pepper to taste
Pour dressing over herring mixture and toss lightly. Stir in ½ cup sour cream.
Cover bowl, chill several hours or overnight. Just before serving add more
cream or seasoning if necessary. This can be served as a salad. Serves 6 to 8.
