Heat ½ cup butter to bubbling, do not brown. Into electric bender put:
2 egg yolks
2 tablespoons lemon juice
¼ teaspoon salt
pinch of cayenne pepper
Instructions
Flick motor on and off, twice, at high speed. Turn motor on high and add butter gradually until mixture thickens, if too thick add cold water. Serve with fish, eggs, vegetables. 4 to 6 servings.
