Island Chicken

Recipe Description

Recipe Ingredients

2 whole chicken legs
½ cup flour
1 teaspoon salt
2 whole chicken breasts
1/3 cup salad oil
¼ teaspoon pepper
Sauce:
1 can (1 pound 4 ounces) sliced pineapple
2 tablespoons cornstarch
1 tablespoon soy sauce
1 envelope George Washington bouillon
1 cup sugar
¾ cup cider vinegar
¼ teaspoon ginger
1 large green pepper, cut in ¼ inch circles

Instructions

Wash and dry chicken, coat with flour. Brown chicken in oil, remove to shallow roasting pan, arrange chicken skin side up. Sprinkle with salt and pepper. Combine all ingredients except pineapple slices and green pepper, and bring to a boil, stirring constantly. Boil 2 minutes. Pour over chicken. Bake uncovered 30 minutes. Arrange pineapple slices and green pepper over chicken. Bake 30 minutes longer, until tender. Serve with fluffy rice.
