Lemon Bars

Recipe Description

Recipe Ingredients

2 cups sifted all-purpose flour
½ cup sifted confectioners sugar
1 cup butter or margarine
4 beaten eggs
2 cups granulated sugar
1/3 cup lemon juice
¼ cup all-purpose flour
½ teaspoon baking powder

Instructions

Sift together the 2 cups flour and the confectioners’ sugar. Cut in butter or margarine till mixture clings together. Press in 13 X 9 X 2 inch baking pan. Bake in 350° oven for 20 to 25 minutes or till lightly browned. Beat together eggs, granulated sugar, and lemon juice. Sift together the ¼ cup flour and the baking powder; stir into egg mixture. Pour over baked crust. Bake in 350° oven for 25 minutes longer. Sprinkle with additional confectioners’ sugar. Cool. Cut in bars. Makes 30.
