Lemon Meringue Pie

Recipe Description

Recipe Ingredients

1baked 9 inch pie crust
2/3 cup sugar
3 tablespoons flour
2 cups water
2 lemons, juice and rind
4 egg yolks, well beaten
2 tablespoons butter

Instructions

In top of double boiler, combine sugar, flour, water, lemon juice and rind and egg yolks, stirring slowly to avoid lumps. Cook until thick, stirring constantly. Remove from heat. Add butter; whip hard until smooth. Cool and fill pie. Meringue: Beat 4 eggs whites until soft peaks form. Add ¼ cup confectioners’ sugar, ½ teaspoon cream of tartar and ¼ teaspoon baking powder. Continue beating until stiff. Spread over pie filling and top with grated lemon rind. Brown under broiler quickly before serving.
